These knives are Damascus Steel layered over a VG-10 core making them a durable top quality blade. They are Japanese in style with assorted resin handles. These knives are very comfortable to hold, well balanced and designed to accommodate all sizes of grips. We have put these through extensive testing and they keep a great edge.

Kuritsuke 8" Double Bevel Edge (Kuritsuke Gyuto)

- a multi purpose knife suited best to push or pull style cutting or "tap" chopping but still able to perform in a rocking style motion.

9" Sontoku (Chef's) Double Bevel Edge

This is an excellent all purpose knife ideal for protein and vegetables. A taller blade for added knuckle clearance and a Kamagata tip ( sickle shape) that is less prone to breaking. Ideal for push, pull slicing and tap style chopping
